The Signature Philosophy
Our signature dishes are not simply menu items; they are the clearest expression of how we cook. Each one begins with a relationship: a Canterbury farmer who raises lamb with patience, a South Island diver who selects pāua by hand, a grower who brings us kūmara at the precise moment its sweetness peaks. From those ingredients, our kitchen builds plates that feel both contemporary and quietly nostalgic.
Modern technique gives structure to that instinct. We use slow roasting, gentle smoking, and precise reductions, but we never let method overpower flavour. The result is a balance between innovation and comfort, a style that honours Māori culinary traditions while speaking in the language of a modern Auckland dining room. A signature dish, for us, must taste like New Zealand and feel like a memory worth returning to.
Signature Dish Spotlight
A slow-roasted lamb rack with a herb and copper-hued crust, served with kūmara purée and a red wine jus. The lamb comes from Canterbury farms, where cool air and open pasture give the meat a clean, firm character. Before roasting, we coat the rack with toasted spices, fresh thyme, and a fine crumb that caramelises into a burnished, copper-toned crust.
The kūmara purée beneath is sweet and earthy, a natural counterpoint to the jus, which we reduce slowly with red wine and pan juices until it turns glossy and deep. It is a dish that feels generous without being heavy, precise without being fussy.
Chef's note: the crust is brushed with a little clarified butter before roasting, which helps the copper colour develop evenly.
